Southwestern Shepard’s Pie fromThe Weight & Wellness Way Cookbook and Nutrition Guide

Makes 6 servings | Gluten free 


Ingredients:

 

1 Tbsp olive oil
2 lb ground turkey

1-2 Tbsp chili powder
1 tsp cumin
1 tsp salt
1 Tbsp tomato paste

1 Tbsp olive oil
2 c onion, chopped
2 c red bell pepper, chopped
2 cloves garlic, minced

Topping
2 lb sweet potatoes, cooked
2 Tbsp heavy cream or coconut milk
2 Tbsp butter
1 tsp salt


 

Directions:

  1. Preheat oven to 350° degrees.
  2. Brown turkey in olive oil.
  3. Add seasonings and tomato paste to turkey and cook for 2-3 minutes. Set aside.
  4. Sauté onion, pepper and garlic in olive oil about 10 minutes, until tender. Mix with turkey. Pour into a 13” x 9” baking dish.
  5. Cook sweet potatoes and mash with cream or coconut milk, butter and salt.
  6. Spread topping over turkey and vegetables and bake for about 25-30 minutes at 350°.

 

Chicken & Potato Enchiladas RecipefromThe Weight & Wellness Way Cookbook and Nutrition Guide

Makes 6 servings | Gluten free 

 

Ingredients:


2 c potatoes, thinly sliced
½ tsp salt

2 lb. chicken breast or thighs, cut into bite-size pieces
2 Tbsp olive oil
½ tsp salt

Sauce
1 c tomato sauce
1-2 Tbsp chili powder
1 tsp cumin
1 c chicken broth (preservative free)
½ tsp salt
1 c salsa

Step 4

1 c shredded cheese


 

Directions:

  1. Preheat oven to 350° degrees.
  2. In a quart-size sauce pan, bring water, salt and potatoes to a boil. Reduce heat and simmer until tender, about 7-10 minutes.
  3. Season and brown chicken in olive oil.
  4. Combine sauce ingredients in separate pan and simmer for about 10-15 minutes, stirring occasionally.
  5. In a square baking dish layer: sauce, potatoes, sauce, chicken, sauce, potatoes, sauce, chicken. Top with shredded cheese.
  6. Bake at 350° for 30-40 minutes until hot and bubbly.
